From the aromas coming out of this delicious cup, we have to highlight the citric and sweet touches. The peachy flavours became in a dark chocolate and blackberries aftertaste.

This coffee comes from Inza, in the Colombian region of Cauca. The fields where it’s produced lies on the mountains of the Macizo Colombiano, where the altitudes reach the 2000 masl. This region of Cauca has many indigenous inhabitants that works on agriculture and their fields, grow different types of crops. The Pazadentreo program, supported by the European Union, is in charge of offering to these producers technical assistance and mediation between them and the markets. Thanks to this guidance on agricultural and economic management, along with the technical advice on post-harvest techniques, they promoted a more sustainable production and improved the socio-economic situation of the population of the area as well.

If you have an espresso machine we recommend using 18 grams of coffee to extract 38 grams in a cup in a time of 30 seconds. We use a temperature of 93ºC with the help of 8 bars of pressure.

We offer you these guidelines so that you have a guide when developing a recipe, but you should bear in mind that it can change depending on the coffee machine you are working with, the grinder and the water you are using.
