Course content:
The SCA Sensory Skills Professional course prepares students to lead and manage sensory evaluation programs within the coffee industry. It is designed to develop the skills necessary to make informed decisions based on sensory analysis and to apply standardized methodologies in various professional settings.
This edition will also feature an exceptional guest lecturer: Julián Loayza, an instructor authorized by the Specialty Coffee Association (SCA) for various training modules and a professional with extensive experience in the specialty coffee sector. His expertise and practical insight will provide an enriching perspective on how to apply sensory evaluation in real-world situations within the industry.
Throughout this intensive and interactive course, students will learn to:
- Understand current industry standards and best practices in sensory science as applied to coffee.
- Evaluate coffees using the most current approaches, including the principles of Coffee Value Assessment (CVA).
- Use the World Coffee Research Sensory Lexicon and flavor wheel to develop precise and consistent descriptive language.
- Identify the intensities of sensory attributes, mouthfeel, defects, and potential issues arising from roasting.
- Understand how psychological and cultural factors can influence the perception and evaluation of coffee.
- Design and conduct descriptive and affective evaluations, as well as consumer tests tailored to different professional objectives.
- Implement repeatable methodologies that generate reliable data to support decision-making and quality control.
This course is designed for professionals who wish to lead or participate in quality control and sensory evaluation programs across various sectors of the industry, including coffee shops, roasters, importers, and companies dedicated to the development of coffee-related products.
Prerequisite: To enroll in this course, you must have previously completed the SCA Sensory Skills Intermediate course.

Terms and Conditions
At The Coffee Academy, we strive to offer a high-quality learning experience to all our students. However, we reserve the right to reschedule the course date or refund the full course fee if attendance falls below 4 participants. We are committed to your satisfaction and will do our best to accommodate your needs and ensure you get the most out of your experience with us.
Cancellation and Punctuality Policy
When you purchase a course, your spot is automatically reserved. This means that if you do not attend, you may be preventing others who are interested from participating. Therefore, we apply the following policy:
- A 50% penalty will apply if you cancel less than 15 days in advance or within 48 hours prior to the course. In that case, only 50% of the total amount will be refunded.
- No refunds will be issued if the student does not attend the course or if the cancellation is communicated less than 48 hours in advance.
- Once the course date has been set, no changes may be made, except in cases of force majeure such as illness or accident.
- In cases of force majeure (illness, accident, etc.), the student will be offered a spot in the next session of the course. This change may only be made once. If the student does not attend the new date, no refund will be issued.
Clarification: The cancellation policy does not apply to illnesses or accidents. In such cases, the student may reschedule their participation as indicated above.
Punctuality
We ask that you arrive on time for the course. We will allow a 5-minute grace period before starting. After 15 minutes past the start time, entry will not be permitted, out of respect for the other participants and to ensure the smooth running of the class. We appreciate your understanding.
