Entre Ríos, grown in central Costa Rica, in the Cartago region, is a flagship coffee at Nomad and for the sixth consecutive year we have maintained a direct relationship with the producer. Located on the slopes of the Turrialba volcano, at 1400 meters above sea level, it is the largest coffee plantation in Costa Rica. The land is sectioned by several watercourses that connect the two large rivers that surround the farm, the Turrialba and the Aquiares. It is a majestic natural setting where a small pre-Columbian community lived hundreds of years ago and of which there are still vestiges.
The process Washed that these cherries follow, begins with a pre-selection by flotation, separating the densest and healthiest. They are then pulped and the mucilage is removed mechanically before being placed in tanks of water for a partial fermentation of 6 hours. After this time they are pre-dried and then placed in the Guardiola where they are kept for 32 hours at a temperature of between 45 and 55 degrees Celsius. After drying, the coffee is stored in silos where it remains at a stable humidity that ensures that the coffee beans remain in excellent condition until shipment.
