Cristobal Laura grows coffee on his farm El Lechero, located in San José de Lourdes, in northern Cajamarca. After years working on several family farms, he became independent in 2016 and chose to focus on exotic varieties such as Geisha and SL28. Thanks to the farm's high altitude, fertile soil and meticulous processing, Cristobal produces high-quality coffees that have gained recognition at auctions and among specialty buyers around the world.
With the support of Origin Coffee Lab, he has improved his agronomic and processing practices, ensuring traceability and consistency. Its commitment to quality and innovation has positioned it as one of the most promising producers in northern Peru.
Process
The ripe cherries are hand-picked with careful selection and pulped the same day. The coffee then undergoes a 48-hour dry fermentation in sealed plastic tanks, allowing the complexity to develop without compromising the clarity of the cup. After Washed, it is slowly dried on raised beds in the shade for 15 to 20 days until the ideal moisture content is reached.
This meticulous process, combined with the Geisha variety and the unique terroir of Cajamarca, results in a clean, sophisticated cup that brings out the best in high-altitude Peruvian coffee.
