From Hacienda La Florida comes this botanical experience. A super fresh, herbal and citrusy batch with complex and original notes. In fragrance and aroma we like its notes of basil and rosemary and in mouth we feel citrus touches like lemongrass and lime peel. A medium-light body with honeyed touches and an electric acidity make each sip of this coffee a unique sensory adventure.
Hacienda La Florida is managed by the Coronel family and is a perfect example of a sustainable farm producing world class coffees. They made a name for themselves by winning Ecuador's Golden Cup in 2020, their coffees were also used by the Brewing 2021 champion, and in 2022 they took 3rd place in the Golden Cup with their Sidra White Honey batch. But it hasn't gone to their heads. They are experienced workers of the land, busily producing sugar cane, fruits and vegetables on their land, as well as raising pigs and tilapia fish.
The Coronel family manages an agroforestry system on the farm where they pay special attention to the soil. They firmly believe that a healthy soil, adapted to the needs of the plants and the environment, is crucial for good cup quality. Hacienda La Florida was acquired by the Coronel family in 1993. They tell us that it was a Spanish hacienda in colonial times and an indigenous settlement before that. The climate in the area is very warm and dry. During the rainy season, the climate changes drastically and rainfall is very high. It is surrounded by a primary forest that is home to a wide biodiversity such as orchids, civets, armadillos, deer and pumas, some of which are often seen roaming around the farm.
In early 2023, the farm suffered significant flooding due to an unusually heavy rainy season. The river next to the farm rose several meters and washed away the entrance road to the farm and six tilapia ponds.
Ramiro and his younger brother Fabricio are agronomists. They have been growing coffee since 2014 after being introduced to specialty coffee farming by a ministry of agriculture project to reactivate coffee production in the country. After this initial support, La Florida has independently evolved into quality sustainable agriculture.
Process
The cherries are fermented for 5 days in stainless steel tanks. The cherries then undergo a 40-day drying stage in a dark, ventilated room where temperature and humidity are controlled. When the humidity reaches 10.5%, the cherries are placed in GrainPro bags to stabilize.
