Elderflower, honey and loquat combine in a delicate and fragrant cup, where subtle notes of dried apricots also emerge. Its balanced acidity and silky body provide structure and elegance, resulting in a sweet, floral and persistent espresso that speaks of the care and dedication with which it has been made.
This lot was born from Gasharu Coffee's commitment to recognize the work of women in the coffee chain. Women's Crown - Rugori is a project entirely managed by women, from harvesting to processing, and pays homage to the "Urugori", the symbolic crown that in Rwanda is given to women after their first birth as a sign of respect and recognition.
More than 70% of Gasharu Coffee's staff is made up of women, and this coffee seeks to ensure that their work is valued fairly, allocating greater economic benefits directly to them. A commitment to equity that has a positive impact on nutrition, girls' education and the sustainability of the communities.
Process
Once harvested, the cherries are floated in tanks with water and pulped with a McKinnon before undergoing dry fermentation for 12-14 hours. They are then sorted by density into Washed channels, separating three grades. Grade A is fermented a second time for 8 hours, pre-dried on special tables and then transferred to raised African beds where it is dried for 16-20 days.
This lot is composed solely of Grade A coffee, dried, selected and prepared for export by highly experienced women.
