This is the brewing process that requires the most technical preparation. It offers clean, juicy and elegant coffees, with a great aromatic power.

  • Filters
  • Filtered or bottled water

  • 15 grs. medium ground coffee

    (6 between 0 and 10)
  • 260 grs. water at 96ºC
  •  1 : 17
  1. Heat water to 96ºC.
  2. We fold the filter to make it fit better and put it in the V60.
  3. We wet the filter to preheat the vessel.
  4. We throw away the excess water.
  5. We put the 15 grams of coffee.
  6. With the help of a spoon we make a nest or crater in the middle so that the water penetrates more consistently.
  7. We make a pre-infusion of 50 grams of water for 30 seconds.
  8. With the spoon we stir the coffee making circles.
  9. Add the remaining 210 grams of water in one minute.
  10. We performed the technique called Spin Rao, which consists of making circles with the V60 container.
  11. We wait for all the coffee to filter.
  12. Serve.
