Do you know how to make espresso, but would like to gain a deeper understanding of coffee itself? If you want to understand specifically the impact of a coffee's variety, origins and processing on the flavor of a cup, this course is for you.
This course is ideal for someone who has experience in barista skills and wants to explore how to improve coffee quality and prepare for more complex job functions found in the barista profession. You will learn how to manipulate dosing parameters, grind quality, extraction time and their interaction when calibrating an espresso recipe, using the refractometer to measure and control brewed extractions, beverage construction and flavor differences; workflow management and efficiency, sensory aspects of espresso extraction; milk handling and techniques, as well as latte art.
In addition, this course also covers key concepts in health and safety, customer service and basic business practices.
WHAT DOES IT INCLUDE?
- - Types of coffees and the impact of origin and process
- - Impact of roasting on solubility and density.
- - Degassing of roasted coffee
- - Work flow: arrangement of accessories and coffee equipment working in pairs
- - Espresso: grinder models and types of grinders, dosing, distribution and sieving techniques. Intensity and extraction in espresso brewing, use of a refractometer and beverage construction.
- - Sensory analysis of espresso: body and texture and use of SCA flavor wheel
- - Water quality
- - Milk: product composition and spoilage, quality and stability, vegetable substitutes, steaming techniques, SCA cream and latte art standards
- - Cleanliness, health and safety
- - Customer interactions, costs and assets.
PRACTICAL DETAILS
The SCA Intermediate Barista course costs 585€ per person and +100€ for the SCA Exam and Certificate. It takes place in our roastery located at Carrer Marroc 160, 08019 Barcelona. The schedule is from 10:00 to 17:00, having a lunch break which is already included in the price. The course is given in Spanish and has a duration of 2 days.
