WHAT IS A QUAKER DEFECT?

1. Once roasted, it is a grain with a very different color from the others.


2. The SCA (Specialty Coffee Association) considers that no specialty coffee should contain a quaker (this is practically impossible).


3. This defect is much easier to appreciate once the coffee is roasted.


4. The producers do not know how to explain what causes the defect, although many speak of an immature coffee and there is also talk of poor nutrition of the capsules.
