WHY IS IT NOT ADVISABLE TO CONSUME FRESHLY ROASTED COFFEE?

There is a false belief that freshly roasted coffee is better and tastier, but this is not exactly correct.

Coffee, unlike products such as bread, needs a resting time after roasting, this process is known as degassing.

This is due to the fact that coffee is full of oils in its interior, during the roasting process the oils are evaporated, but not in an absolute way, that is why it is normal that a bean needs at least 5 days to release these gases in the form of CO2. 


Because of this, in the vast majority of specialty coffee bags you will find a small valve, which allows these gases to escape but prevents oxygen from entering the bag.
